A traditional, human-sized cellar in the village of Châteauneuf-du-Pape, equipped with barriques (225 litre barrels reserved for lengthy maturing of flagship cuvée, La Clef de St Thomas).
We also have a room of temperature-controlled stainless steel vats to vinify our Châteauneuf-du-Pape white wines.
For the reds: grapes are fully destemmed.
Fermentation at 25 °C, 15-20 days’ maceration in 30-50 hl vats.
Matured in barriques for 12-14 months.
For the white: grapes are fully destemmed.
Fermentation in vats and barriques at 15°C, then matured on fine lees for 4-6 months.
