Tasting
2016 – Garnet red, with a nose of wild red fruit (blackberries, raspberries, black cherries) which opens onto spices when aerated. On the palate: fleshy, mature, rounded. From nose to palate, the aromas are exactly the same, leading through to a fresh and liquorice-laced finish.

Terroir: The 11-hectare (28-acre) Domaine Clef de St Thomas consists of various plots near Courthezon and to the north of the village of Châteauneuf-du-Pape.
This cuvée is a plot selection from the Charbonnieres locality.
The cuvée and its label pay tribute to the grandfather of estate owner Sophie Kessler Matière, who had blue eyes and matured Bleu d’Auvergne cheese.

Winemaking
The grapes are hand picked in crates from mid-September onwards, and are fully destemmed before being vinified. Fermentation takes place at 25°C, and the wine is matured the traditional way in stainless-steel vats.
