- 1 roll of puff pastry
- 1 egg
- Salt and pepper
- Preheat the oven to gas mark 8 (240°C).
- Cut four discs in a roll of puff pastry.
- Place them on a baking tray, prick with a fork, brush with beaten egg yolk and bake for about 10 mins.
- Leave the discs to cool on a rack.
- Spread them with pistou, cover with fine slices of tomato, add salt and pepper, and serve at once.
