  • 1 roll of puff pastry
  • 1 egg
  • Pistou
  • Tomatos
  • Salt and pepper


  1. Preheat the oven to gas mark 8 (240°C).
  2. Cut four discs in a roll of puff pastry.
  3. Place them on a baking tray, prick with a fork, brush with beaten egg yolk and bake for about 10 mins.
  4. Leave the discs to cool on a rack.
  5. Spread them with pistou, cover with fine slices of tomato, add salt and pepper, and serve at once.
