Rocher Rouge

Rocher Rouge is Château Calissanne’s flagship cuvée, crafted from Mourvèdre and Syrah. Seductively elegant and concentrated, it serves up hallmark notes of cedar, incense and garrigue scrubland. A wine of great character.

A rich wine thanks to the maturity of this vintage. A fleshy mouthfeel around notes of redcurrant, cedar and mild spice. Linear and powerful on the palate, and winningly elegant.

Its woodiness is well controlled, and completely integrated in the fruit.

The grapes are hand picked in the second half of September, and can thus be sorted in necessary.

Once delivered to the winery, the grapes are destemmed then chilled. The juices are vinified for three weeks in small quantities in temperature-controlled vats. If necessary, moderate cap-punching is performed during the maceration phase.

The wine is transferred by gravity flow from the vats to maturing barrels (barriques and demi-muids).

The juices then undergo malolactic fermentation.

The resulting wine is matured for at least 14 months.

Conseils Mets & Vins

This cuvée will make a perfect match for flavourful meat dishes: lamb navarin, filet mignon with honey, or beef fillet in green peppercorn sauce.

Its rich structure and high-quality tannins mean it can do justice to gutsy cheeses.
