The essence of Calissanne’s terroir 

Dégustation

Deep in colour, with a brilliant ruby glow! The nose takes a few minutes to open up: garrigue scrub (laurel, Provençal herbs), red fruit coulis, and exotic wood (hints of cedar and tobacco). These complex aromatics are also found on the palate, which also offers more assertive roasted notes. This is a rich and powerful wine, with tannins in evidence but harmoniously coating the palate. The essence of our terroir!

Terroir: A terroir with a mix of generations: the Cabernet Sauvignon is from plots more than 40 years old, while the Syrah comes from much younger vines. Their point in common? Stony soils due to the deterioration of the cliffs.

Vinification

The grapes are harvested in early September (Syrah) and late September (Cabernet Sauvignon). Small varietal batches undergo temperature-controlled vinification with lengthy maceration (15-20 days). After malolactic fermentation, the wine is matured in oak barrels (barriques and demi-muids). Then, after each barrel has been tasted, blending is conducted.

Serve with local terroir dishes – meat and game. But also terrific with a platter of cheeses.
